Ingredients

  • 1 1/2 tbsp vegetable oil
  • ¾ cup popcorn kernels
  • 6 tbsp unsalted butter, cut into 1 tbsp size pieces
  • ¾ tsp kosher salt
  • 2 tbsp nutritional yeast

Method

  1. In a shallow 3 1/2-quart pot, or a 3-4 quart dutch oven, heat the oil along with two kernels of popcorn over high heat and cover. Once you hear them both pop, add in the remaining kernels and cover.
  2. Once the popcorn starts popping, begin shaking the pan vigorously every 30-60 seconds to ensure even cooking.
  3. Once the popping begins to slow down, remove the pan from the heat and let it sit for 1 more minute. Pour popcorn into a large bowl.
  4. In a small saucepan add butter and cook, over medium heat, stirring often until butter begins to brown, foam and smell slightly sweet and nutty, about 5 minutes. Remove from heat immediately to avoid burning.
  5. Toss popcorn with browned butter, salt and nutritional yeast until combined. Add more salt if needed.

Yield: 12 cups popped popcorn
