Homemade Fried Rice

Ingredients

  • 3 large eggs, beaten
  • ¼ teaspoon sea salt, plus more to taste
  • 2 ½ teaspoons toasted sesame oil
  • ⅓ cup coconut aminos
  • 3 tablespoons vegetable oil
  • 2 medium carrots, finely diced (about 1 cup)
  • 1 small yellow onion, finely chopped (about 1 cup)
  • 3 cloves garlic, minced
  • 4 cups cooked white rice, preferably day-old
  • ¾ cup frozen peas, thawed
  • 4 green onions, chopped
  • 2 tablespoons soy sauce
