Grilled Scallops with Lemon Aioli and Arugula

Ingredients

lemon Aioli

  • ½ cup mayonnaise
  • 1 garlic clove, minced
  • 2 teaspoons grated lemon zest, (from 1 lemon)
  • 2 tablespoons fresh lemon juice, (from 1 lemon)
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly cracked black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon honey

Scallops

  • 16 to 20 Grilled Scallops
  • 4 cups loosely packed arugula

Method

  1. Make the lemon aioli. In a small bowl, whisk together the mayonnaise, garlic, lemon zest and juice, salt, pepper, paprika, and honey until smooth. Cover and refrigerate until ready to serve.
  2. To serve, arrange arugula and scallops on a platter or individual plates. Serve immediately with lemon aioli alongside.
