Grilled Sausage and Vegetables with Creamy Dill Dip

Ingredients

  • 1 pound mild Italian sausage, links (about 4)
  • 1 pound vegetable of your choice (like bell peppers, zucchini, red onion, or asparagus)
  • 2 tablespoons extra-virgin olive oil
  • Sea salt, to taste
  • Freshly cracked black pepper, to taste

Creamy Dill Dip

  • 3 tablespoons extra-virgin olive oil
  • ½ cup mayonnaise
  • 2 cloves garlic, minced
  • 2 tablespoons fresh dill, plus more to taste
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon fresh lemon juice (from 1 lemon)
  • ⅓ cup freshly grated Parmesan cheese
  • ¼ teaspoon sea salt
  • Freshly cracked black pepper, to taste

Method

  1. Preheat the grill on medium.
  2. Place the sausages on the grill or grill pan and cook, rotating often, until cooked through, 12 to 15 minutes.
  3. Meanwhile, in a medium bowl, toss the vegetables with the olive oil, salt, and pepper. Transfer the vegetables to a grill basket and place on the grill. Cook, rotating the vegetables occasionally, until charred and tender, 6 to 8 minutes.
  4. While the sausages and vegetables cook, make the creamy dill sauce. In the base of a blender or food processor, combine the olive oil, mayonnaise, garlic, dill, garlic powder, onion powder, lemon juice, Parmesan, salt, and pepper. Blend until smooth.
  5. Slice the sausage and place on a platter along with the veggies. Drizzle with the creamy dill dressing and serve.

Notes

A grill pan is a great indoor alternative to a grill. Use it over high heat on your stovetop—just note that it won’t take quite as long to heat up as the grill!
