Grilled Pork Chops

Ingredients
- 1 ½ teaspoons kosher salt
- ¾ teaspoon freshly cracked black pepper
- ¾ teaspoon garlic powder
- 1 teaspoon dried basil
- 1 teaspoon smoked paprika
- ½ teaspoon mustard powder
- 1 ½ teaspoons brown sugar
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon soy sauce or tamari
- 4 (1- to 1½-inch-thick) bone-in pork chops, (about 3 pounds total)
- 2 cloves garlic, minced

Method
- In a small bowl, combine the salt, pepper, garlic powder, basil, paprika, mustard powder, and brown sugar until fully combined.
- Drizzle the olive oil and soy sauce over the pork chops. Rub each pork chop with the minced garlic, then season all over with the seasoning blend, pressing to adhere. Let the pork chops sit at room temperature for 10 minutes.
- Preheat the grill or grill pan on medium-high.
- Place the pork chops on the grill or grill pan and cook, undisturbed, for 5 to 6 minutes. Flip and continue cooking until the internal temperature reaches 145°F on an instant-read thermometer, 5 to 6 minutes more. Transfer to a plate and let rest for 5 minutes before serving.
Notes
Bone-in chops at this thickness need a slightly longer cook time than boneless. The 5-minute rest time is key to keeping them juicy!
