Grilled Flatbread With Burrata Cheese

Ingredients
- 8 ounces cherry tomatoes
- 4 metal or bamboo skewers, soaked in water for 30 minutes
- ½ cup extra-virgin olive oil, plus more for serving
- Kosher salt
- Freshly cracked black pepper
- 1 pound fresh pizza dough
- Flour, for dusting
- 4 ounces Parmesan cheese, grated
- 8 ounces burrata, drained and torn
- 2 tablespoons chopped fresh basil
Method
Preheat the grill on medium heat.
Thread the tomatoes onto the skewers, dividing evenly. Place the skewers on a large plate. Brush the tomatoes with olive oil and season with salt and pepper. Place the skewers on the grill and cook without moving them for 5, turn and cook for another 5 minutes, or until tender and charred. Return to the plate.
Meanwhile, divide the dough into 4 equal portions. On a lightly floured surface, roll each portion into ¼-inch-thick rounds. Using a pastry brush, generously coat the tops of the dough with olive oil.
Place the dough oil side down on the grill and carefully brush the tops with the remaining olive oil. Cook until large bubbles start to form on top, about 5 minutes. Flip the dough and sprinkle evenly with Parmesan. Evenly top with the burrata, and continue cooking, covered, until the cheese begins to melt, 4-5 minutes more.
Transfer the flatbread to a platter and sprinkle with the basil and drizzle with olive oil. Serve with tomato skewers on the side.
