Grilled BBQ Chicken

Ingredients

  • 3 pounds bone-in, skin-on chicken wings, thighs or legs, or boneless thighs, and/or breasts
  • 2 teaspoons kosher salt
  • 1 ½ cups BBQ Sauce, homemade or store-bought

Method

  1. Heat one side of the grill on high (400° F).
  2. Season the chicken all over with salt. Place the chicken, skin side down, on the side of the grill with direct heat and cook until charred all over, about 3-4 minutes each side.  Brush the chicken evenly, all over with half of the BBQ sauce and transfer to the other side of the grill, to finish cooking over indirect heat. 
  3. Cover the grill and cook the chicken for 15-20 minutes. Turn the chicken again, brushing evenly with the remaining BBQ sauce. Cover the grill and cook until the internal temperature of the chicken reaches 165°F on an instant read thermometer, about 15-30 minutes more (see Note). 

Notes

Wings, legs and boneless chicken thighs will be done after about 30-40 minutes (15-20 minutes per side). Bone in, skin on thighs and breasts (depending on size) will be done after about 40-50 minutes (20-25 minutes per side).
