Garlic Butter Grilled Shrimp

Ingredients

  • 2 pounds large tail-on shrimp, peeled and deveined (about 30 to 35 shrimp)
  • 3 garlic cloves, minced
  • ½ cup (1 stick) salted butter, melted
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon sea salt
  • 2 tablespoons minced fresh flat-leaf parsley, plus more for serving
  • 1 lemon cut into wedges, for serving

Method

  1. Preheat the grill or grill pan on medium-high heat. 
  2. In a large bowl, whisk together the melted butter, paprika, cayenne, garlic powder, salt, parsley, and garlic until well combined. Reserve ¼ cup of the garlic butter mixture in a small bowl.
  3. Add the shrimp to the bowl with the remaining garlic butter and toss until evenly coated. Tightly thread the shrimp onto 6 skewers, dividing evenly. Place the skewers on the grill or grill pan and cook without moving them for 3 to 4 minutes. Flip and continue cooking until the shrimp is lightly charred and cooked through, 3 to 4 minutes more. 
  4. Arrange the skewers on a large platter. Brush with the reserved garlic butter and garnish with parsley. Serve immediately with lemon wedges on the side for squeezing.

Notes

You can use metal or bamboo skewers! If using bamboo, soak in water for 30 minutes before adding the shrimp.
