Ingredients

Lamb Chops

  • 2 teaspoons kosher salt
  • 1 tablespoon garam masala
  • 2 garlic cloves, grated
  • 1 tablespoon freshly grated ginger
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon brown sugar
  • 12 1¼-inch thick lamb rib chops (about 2¼ pounds), frenched
  • 6 green onions

Mint Chutney

  • 1 cup mint leaves, chopped
  • ½ cup cilantro leaves, chopped
  • 1 garlic clove, minced
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon Garam masala
  • 1 to 2 Thai or fresno chiles, seeded and finely chopped
  • 1 teaspoon brown sugar
  • 1½ teaspoons kosher salt, plus more to taste
  • 2 tablespoons red wine vinegar
  • ¾ cup extra-virgin olive oil, plus more for greasing
