Ingredients
1 ½ ounces
gin
¾ ounce
fresh lemon juice, (from 1 lemon)
½ ounce
simple syrup
2 ½ ounces
Champagne, Brut or sparkling wine
Lemon peel, for garnish
Method
Fill a cocktail shaker with ice. Add the gin, lemon juice, and simple syrup. Shake vigorously until the shaker is chilled, 20 to 30 seconds. Strain and pour into a coupe or champagne glass. Top with the champagne and garnish with the lemon peel.
