Fasolakia

Ingredients

  • ½ cup extra-virgin olive oil
  • 1 large yellow onion, finely diced
  • 6 garlic cloves, minced
  • 1 (14.5-ounce) can diced tomatoes or 3 fresh tomatoes, diced
  • 2 tablespoons tomato paste
  • 3 Yukon Gold potatoes, cut into 1½-inch pieces
  • 1 pound green beans, trimmed
  • ½ cup fresh flat leaf parsley, finely chopped
  • 2 tablespoons chopped fresh dill
  • ½ teaspoon kosher salt, plus more to taste
  • Freshly cracked black pepper, to taste
  • Feta cheese, for serving
  • Crusty bread, for serving
