Easy Homemade Granola

Ingredients
- 4 cups old-fashioned oats
- 2 cups sliced almonds
- ½ teaspoon kosher salt
- ¼ cup brown sugar
- ¼ cup maple syrup
- ¼ cup canola oil or coconut oil, melted
- ¼ cup extra virgin olive oil
- 1 teaspoon pure vanilla or almond extract
- 2 cups optional add ins: chocolate chips, diced dried fruit or coconut flakes
Method
Preheat the oven to 375° F.
Line a rimmed baking sheet with parchment paper.
In a large bowl, toss the oats, almonds, coconut flakes (if using) and salt until fully incorporated.
In a small saucepan set over medium heat, mix together the brown sugar, maple syrup, canola (or coconut) and olive oils, and the vanilla extract until the brown sugar melts, about 5 minutes. Remove from the heat.
Pour the brown sugar sauce into the bowl with the oats and toss together until fully incorporated.
Spread the granola onto the parchment lined baking sheet.
Bake for 15 mins, stirring the granola ½ way through to prevent uneven browning.
Once your granola is finished baking, let it cool for 15 mins on the baking sheet. Once cooled, crumble the granola and stir in the dried fruit and or chocolate chips.
