Easy Homemade Granola

Ingredients
- 4 cups old-fashioned oats
- 2 cups sliced almonds
- ½ cup coconut flakes, (optional)
- ¼ cup brown sugar
- ¼ cup pure maple syrup
- ¼ cup vegetable or coconut oil, melted
- ¼ cup extra-virgin olive oil
- 1 teaspoon pure vanilla or almond extract
- ½ teaspoon kosher salt
Optional Add-Ins (optional)
- ¾ cup chocolate chips
- ¾ cup chopped dried fruit
Method
- Preheat the oven to 375°F with a rack in the center position. 
- Line a large rimmed sheet pan with parchment paper. 
- In a large bowl, combine the oats, almonds, and coconut flakes (if using). 
- In a small saucepan set over medium heat, whisk together the brown sugar, maple syrup, vegetable oil, olive oil, vanilla extract and until the brown sugar melts, about 5 minutes. Remove from the heat. 
- Pour the brown sugar mixture into the bowl with the oats and toss together until fully incorporated. 
- Spread the granola onto the prepared sheet pan. 
- Bake for 15 minutes, stirring the granola half way through to prevent uneven browning. Let cool on the baking sheet. Crumble, then stir in the chocolate chips and/or dried fruit if using.
