Easy Homemade Granola

Ingredients
- 4 cups old-fashioned oats
- 2 cups sliced almonds
- ½ cup coconut flakes, (optional)
- ¼ cup brown sugar
- ¼ cup pure maple syrup
- ¼ cup vegetable or coconut oil, melted
- ¼ cup extra-virgin olive oil
- 1 teaspoon pure vanilla or almond extract
- ½ teaspoon kosher salt
Optional Add-Ins (optional)
- ¾ cup chocolate chips
- ¾ cup chopped dried fruit
Method
Preheat the oven to 375°F with a rack in the center position.
Line a large rimmed sheet pan with parchment paper.
In a large bowl, combine the oats, almonds, and coconut flakes (if using).
In a small saucepan set over medium heat, whisk together the brown sugar, maple syrup, vegetable oil, olive oil, vanilla extract and until the brown sugar melts, about 5 minutes. Remove from the heat.
Pour the brown sugar mixture into the bowl with the oats and toss together until fully incorporated.
Spread the granola onto the prepared sheet pan.
Bake for 15 minutes, stirring the granola half way through to prevent uneven browning. Let cool on the baking sheet. Crumble, then stir in the chocolate chips and/or dried fruit if using.
