Creamy Polenta

Ingredients

  • 3½ cups chicken or vegetable stock
  • 1½ cups whole milk
  • 1 cup stone ground polenta or yellow cornmeal
  • ½ cup (1 stick) unsalted butter
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon sea salt, plus more to taste
  • ½ teaspoon freshly cracked black pepper

Method

  1. Bring the chicken stock and milk to a boil in a medium pot over medium-high heat.
  2. Stir in the polenta, then reduce the heat to medium low. Cook, stirring often, until tender and creamy, 30-40 minutes.
  3. Stir in the butter, parmesan, salt, and pepper until combined.
  4. Season with salt to taste. Serve warm.
