Creamy Polenta Recipe

Ingredients

  • 1 cup stone ground polenta or yellow cornmeal
  • 4 cups chicken or vegetable stock
  • 2 cups whole milk
  • 4 oz butter (1 stick)
  • 1 cup grated Parmesan cheese, about 2 oz
  • 1 tsp sea salt
  • ½ tsp freshly cracked black pepper

Method

  1. In a medium-sized post (at least 3 quarts) bring chicken stock and milk to a simmer over medium heat.
  2. Add the polenta and simmer until tender and creamy about 30-40 minutes.
  3. Add the butter and parmesan cheese. Season to taste with salt and pepper.
