Ingredients

chicken or vegetable stock

1½ cups
whole milk

1 cup
stone ground polenta or yellow cornmeal

½ cup (1 stick)
unsalted butter

1 cup
freshly grated Parmesan cheese

1 teaspoon
sea salt, plus more to taste

½ teaspoon
freshly cracked black pepper
Method

Bring the chicken stock and milk to a boil in a medium pot over medium-high heat.

Stir in the polenta, then reduce the heat to medium low. Cook, stirring often, until tender and creamy, 30-40 minutes.

Stir in the butter, parmesan, salt, and pepper until combined.

Season with salt to taste. Serve warm.
