Creamy Mushroom Sauce

Ingredients
- 1 pound cremini mushrooms, quartered
- ¾ teaspoon kosher salt, plus more to taste
- 2 tablespoons unsalted butter
- 1 cup heavy cream
- 2 tablespoons low-sodium soy sauce or tamari
- 1 tablespoon fresh thyme leaves
Method
In a dry skillet over medium heat, add the mushrooms and cook, stirring occasionally, until just beginning to brown, about 5 minutes. Sprinkle with salt and cook stirring until beginning to “sweat”, about 2 more minutes.
Stir in the butter. Once the butter begins to bubble, add the cream, soy sauce, and thyme. Reduce the heat to a low simmer and cook, stirring often, until the sauce is thickened slightly, 6 to 7 minutes. Season with salt to taste.
Serve with roast chicken, pork, steak or over cooked pasta.
