Creamy Feta with Tinned Fish

Ingredients
- 6 ounces block of feta cheese
- 1 tablespoon extra virgin olive oil
- 1/4 cup jarred roasted red peppers
- 4 ounces tinned fish, such as octopus or trout
- 1/4 cup parsley leaves
- 1/2 teaspoon red pepper flakes
- 2 slices bread, toasted (optional)
Method
In a food processor, blend feta with 1 tablespoon of olive oil. Spread the feta mixture on a medium-sized plate. Top with roasted red peppers, tinned fish of your choice, some fresh parsley and drizzle with a little more olive oil and finally, sprinkle with some red pepper flakes.
