Creamy Feta with Tinned Fish

Ingredients

  • 6 ounces block of feta cheese
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup jarred roasted red peppers
  • 4 ounces tinned fish, such as octopus or trout
  • 1/4 cup parsley leaves
  • 1/2 teaspoon red pepper flakes
  • 2 slices bread, toasted (optional)

Method

In a food processor, blend feta with 1 tablespoon of olive oil. Spread the feta mixture on a medium-sized plate. Top with roasted red peppers, tinned fish of your choice, some fresh parsley and drizzle with a little more olive oil and finally, sprinkle with some red pepper flakes.
