Creamy Feta with Tinned Fish

Ingredients

1 (6-ounce) block
feta cheese

2 tablespoons
extra-virgin olive oil

¼ cup
jarred roasted red peppers, drained

4 ounces
tinned fish, such as octopus or trout

¼ cup
fresh flat-leaf parsley leaves

½ teaspoon
red pepper flakes

2 slices
bread, toasted (optional)
Method

In a food processor, blend feta with 1 tablespoon of the olive oil until smooth and creamy.

Spread the feta mixture on a medium serving plate or on toast, if using. Top with the roasted red peppers, tinned fish, and fresh parsley.

Drizzle with the remaining 1 tablespoon olive oil and sprinkle with red pepper flakes. Serve immediately.
