Cranberry Relish

Ingredients
- 12 ounces fresh cranberries
- 1 cup diced apple, such as Granny Smith or Honeycrisp
- 1 medium orange, rind on, sliced and seeded
- 1 cup sugar
- ½ teaspoon kosher salt
- 1 tablespoon fresh lemon juice (from one lemon)
Optional add-ins
- ½-1 jalapeño, seeded and finely chopped
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- ¼ cup finely chopped walnuts
- ¼ cup finely chopped pecans
- ½ cup finely chopped dried apricots
Method
In the base of a food processor, pulse the cranberries until coarsely chopped. Transfer to a medium bowl.
Add the apples to the food processor and pulse until finely chopped. Transfer to the bowl with the cranberries.
Add the oranges to the food processor and pulse until finely chopped. Transfer to the bowl with the cranberry mixture.
To the same bowl, add the sugar, salt, lemon juice, and any add-in, if using. Toss until combined. Cover and refrigerate for at least 2 hours or up to 3 days before serving. Will keep for up to one week.
