Cookie Brittle

Ingredients
- 1 cup (2 sticks) unsalted butter
- 1 cup granulated sugar
- 1 teaspoon sea salt
- 1 ½ teaspoons vanilla extract
- 2 cups bleached white flour
- 1 cup semi-sweet chocolate chips
Method
Preheat the oven to 350° with a rack in the center position.
In the bowl of a stand mixer, cream the butter, sugar, salt, and vanilla until light and fluffy, 3-5 minutes. Using a wooden spoon or spatula, fold in the flour until fully incorporated, then fold in the chocolate chips.
Press the dough into a 9 x 13-inch baking pan. Bake for 20 to 25 minutes, or until golden on edges, but not too dark.
Remove from the oven and let cool until firm but not too hard to cut, about 10 minutes. Using a sharp knife, cut the cookie brittle into triangles.
