Classic Cheese Burger with Secret Sauce

Ingredients
- 2 pounds 80/20 ground beef
- 2 eggs
- 3 teaspoons garlic powder, granules
- 2 tablespoons Worcestershire sauce
- 2 teaspoons mustard powder
- 2 teaspoons kosher salt, plus more for seasoning
- 1 teaspoon freshly cracked black pepper, plus more for seasoning
- 6 cheddar cheese slices
- 6 brioche or Hawaiian hamburger buns
- 6 Romaine lettuce leaves, torn into pieces
- 1 tomato, sliced
- Pickle slices (optional)
- 1 cup caramelized onions, (optional)
Secret Sauce
- 1 cup mayonnaise
- 2 tablespoons ketchup
- ½ teaspoon garlic powder
- 2 tablespoons pickle juice
- 1 teaspoon dried dill
- 2 teaspoons fresh lime juice (from 1 lime)
- 1 teaspoon smoked paprika
- ½ teaspoon cayenne pepper
- 1 teaspoon stone ground mustard
Method
Make the sauce. In a small bowl, whisk together the mayonnaise, ketchup, garlic powder, pickle juice, dill, lime juice, paprika, cayenne, and mustard. Cover and store in the refrigerator until ready to use.
In a large bowl, combine the beef, eggs, garlic powder, Worcestershire, mustard powder, salt, and pepper. Mix well, until evenly combined. Divide the meat into six equal parts and form it into patties, about ⅓ inch thick.
Preheat the grill on high.
Season the patties with salt and pepper and place on the grill. Reduce the heat to medium, cover, and cook for 5 minutes. Flip and cook for another 3-5 minutes, to your desired doneness. Add the cheese to the patties and add the buns to the grill, cover, and cook until the cheese is melted and the buns are toasted.
Add a generous amount of sauce to the toasted sides of the buns. Add the beef patties, lettuce, tomato and caramelized onions, if using. Serve with the pickles on the side, if using.
Note: Store any leftover sauce in an airtight container refrigerated for up to 1 week.
