Butter Lettuce Salad with Honey Mustard Vinaigrette

Dressing

extra-virgin olive oil

Dijon mustard

fresh lemon juice, from 1 lemon
2 teaspoons
honey

medium shallot, finely minced
½ teaspoon
sea salt
Salad
1 head
butter lettuce, leaves removed from stem
4
radishes, thinly sliced
1
avocado, pitted and thinly sliced
¼ cup
minced fresh chives
Freshly cracked black pepper, for serving (optional)
Method
In a small bowl, whisk together the olive oil, mustard, lemon juice, honey, shallot, and salt until smooth.
Arrange the butter lettuce leaves on a large platter, top with radishes and avocado. Sprinkle with chives. Drizzle the dressing over the top and serve with freshly cracked black pepper, if using.
