Ingredients

  • 1 large sweet potato, peeled and cut into ½ -inch cubes
  • 2½ tablespoons extra-virgin olive oil
  • ½ teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon brown sugar
  • 1 teaspoon kosher salt
  • 1 bunch kale, stemmed and roughly chopped
  • 1 (15-ounce) can black beans, drained and rinsed

For Serving

  • Cooked brown rice
  • 1 cup vegan cashew cheese sauce
  • Minced cilantro leaves
  • 1 avocado, pitted and sliced
  • 2 green onions, sliced (optional)
