Broccoli Slaw

A bowl of fresh broccoli slaw with shredded carrots and cranberries and almonds, tossed in a light dressing.

Ingredients

  • 1 cup mayonnaise
  • ¼ cup granulated sugar
  • 2 tablespoons fresh lemon juice, (from 2 lemons)
  • 2 tablespoons unfiltered apple cider vinegar
  • ¼ teaspoon sea salt, plus more to taste
  • 1 (1-pound) head of broccoli, with a hearty stem
  • ¼ red onion, thinly sliced
  • 1 cup julienned carrots
  • ½ cup golden raisins or dried cranberries
  • ⅓ cup slivered almonds, toasted
  • ⅓ cup salted sunflower seeds

Method

  1. In a large bowl, whisk together the mayonnaise, sugar, lemon juice, vinegar, and salt until smooth.
  2. Julienne the stem of the broccoli until you have about 1½ cups. Cut the florets into  small pieces. 
  3. Add the florets, stems, onion, carrots, raisins, almonds, and sunflower seeds to the bowl with the dressing and toss until evenly coated. Serve immediately, or cover and chill in the refrigerator for 30 to 60 minutes before serving.

Notes

To make this recipe even faster, replace the broccoli with a 16 ounce bag of store-bought prepared broccoli slaw. This can be found in the salad section at most grocery stores.
