Braised Tomatoes with Burrata

A bowl of braised tomatoes topped with burrata cheese and basil leaves, served with slices of grilled bread on the side
  • Serves:  8
  • Prep Time:  15 min
  • Cook Time:  30 min

Ingredients

  • ⅔ cup extra-virgin olive oil
  • 2 pints cherry or grape tomatoes
  • ½ teaspoon kosher salt, plus more for serving
  • 4 large basil leaves, roughly torn
  • 8 garlic cloves, thinly sliced
  • 8 ounces burrata, drained
  • 16 slices baguette, grilled or toasted

Method

  1. In an oven-proof skillet, heat the olive oil over medium heat. Once the oil is glistening, add the tomatoes, salt, basil, and garlic and cover with a lid. Cook, stirring occasionally, until the tomatoes are softened, about 20 minutes.

  2. Turn the oven broiler to high with a rack in the top-third position. Remove the lid from the skillet and place in the oven. Broil just until tomatoes begin to char, about 5-8 minutes.

  3. Meanwhile, tear the burrata into bite-sized pieces and arrange on a large plate. Spoon the tomatoes over the burrata, season to taste with salt. Serve garnished with additional basil with toasted baguette alongside.
