BBQ Chicken Pizza

Ingredients
- 1 tablespoon extra-virgin olive oil
- ½ red onion, thinly sliced, plus more for garnish
- ¾ pound raw pizza dough, room temperature, store-bought or homemade
- ½ cup BBQ sauce, store-bought or homemade
- 1 cup shredded chicken
- 1 cup shredded mozzarella cheese
- ½ cup shredded smoked gouda or pepper jack cheese
- 2 tablespoons chopped fresh cilantro, for serving
Method
Heat the olive oil in a medium non-stick skillet over medium heat. Once the oil is glistening, add the onion slices and cook, stirring occasionally, until caramelized, about 45 minutes. Reduce the heat to medium-low if the onion begins to brown too quickly.
Preheat the oven to 450°F with a rack in the center position.
Line a large sheet pan with parchment paper or prepare a pizza stone by placing it in the oven. On a lightly floured surface, stretch or roll the dough into a circle about 12-inch in diameter, roughly ½-inch thick. Transfer the dough to the prepared baking sheet or preheated pizza stone.
Spread ⅓ cup of the BBQ sauce onto the dough, leaving 1-inch of crust exposed around the edges. Sprinkle evenly with half of the mozzarella and gouda.
In a medium bowl, toss the shredded chicken with the remaining BBQ sauce, then scatter over the cheese. Top with the caramelized onion and remaining ½ cup mozzarella.
Bake until the cheese melts and the dough is browned on the bottom, 12 to 15 minutes. Top with cilantro and a few raw red onion slices and serve.
