Basil Vinaigrette

Ingredients
- 1 garlic clove, smashed
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice (from 1 lemon), plus more to taste
- ½ cup fresh basil, packed
- ⅓ cup extra-virgin olive oil
- ¼ teaspoon sugar
- ½ teaspoon fine sea salt, plus more to taste
- Freshly cracked black pepper, to taste
Method
To the base of a blender or food processor, add the garlic, lemon zest, lemon juice, basil, olive oil, sugar, and salt. Blend until mostly smooth. Season to taste with pepper and more salt or lemon juice, if needed.
Store refrigerated in an airtight container for up to 2 weeks.
