Baked Sweet Potato

Ingredients

  • 4 medium sweet potatoes, (see Note)
  • 1 tablespoon extra-virgin olive oil
  • 4 tablespoons unsalted butter
  • 1 teaspoon kosher salt
  • Freshly cracked black pepper

  • 4 tablespoons unsalted butter
  • 1 teaspoon kosher salt
  • Freshly cracked black pepper

Method

  1. Preheat the oven to 400°F with a rack in the center position.
  2. Wash potatoes with a stiff brush, removing any excess dirt and pat dry. Prick each potato 8-12 times using a fork. Brush the potatoes with the oil.
  3. Place the potatoes directly on the oven rack, setting a rimmed baking sheet on the lower rack to catch any liquid that drips out of the potatoes.
  4. Bake until tender, about 60 minutes. Let cool for about 5 minutes.
  5. Using a sharp knife, slit the tops of the potatoes open and fluff the inside with a fork. Top with butter, salt and pepper, if desired.

Notes

If using more than 4 potatoes, you may need to increase the cook time by 10 minutes.
