Baked Oatmeal

Ingredients

  • Cooking spray
  • 2 large eggs
  • 2 cups whole milk (or nut-based milk), plus more for serving
  • ¼ cup maple syrup, plus more for serving
  • ¼ cup brown sugar
  • 1 teaspoon sea salt
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • ⅓ cup coconut oil or butter, melted
  • 3 cups quick cooking oats
  • Fresh fruit, for serving

Optional Add Ins

  • ½ cup raisins
  • ½ cup chopped nuts
  • ½ cup chocolate chips

Method

  1. Heat oven to 350°F with a rack in the center position. Grease a 9x9- inch baking dish with cooking spray.

  2. In a medium bowl, beat the eggs. Add the milk, maple syrup, brown sugar, salt, sinnamon, nutmeg, baking powder, vanilla, coconut oil, oats, and desired mix-ins. Stir to combine.

  3. Pour the batter into the prepared baking dish and bake for 35-40 minutes, until golden.

  4. Serve with fresh fruit, a drizzle of maple syrup, and a splash of milk, if desired.
