Baked Oatmeal

Ingredients
- Cooking spray
- 2 large eggs
- 2 cups whole milk (or nut-based milk), plus more for serving
- ¼ cup maple syrup, plus more for serving
- ¼ cup brown sugar
- 1 teaspoon sea salt
- 2 teaspoons ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 teaspoon baking powder
- 2 teaspoons vanilla extract
- ⅓ cup coconut oil or butter, melted
- 3 cups quick cooking oats
- Fresh fruit, for serving
Optional Add Ins
- ½ cup raisins
- ½ cup chopped nuts
- ½ cup chocolate chips
Method
Heat oven to 350°F with a rack in the center position. Grease a 9x9- inch baking dish with cooking spray.
In a medium bowl, beat the eggs. Add the milk, maple syrup, brown sugar, salt, cinnamon, nutmeg, baking powder, vanilla, coconut oil, oats, and desired mix-ins. Stir to combine.
Pour the batter into the prepared baking dish and bake for 35-40 minutes, until golden.
Serve with fresh fruit, a drizzle of maple syrup, and a splash of milk, if desired.
