Baked Meatballs

Ingredients

  • 1 pound 80/20 ground beef
  • ½ pound ground pork
  • 2 large eggs
  • ⅔ cup Italian-style breadcrumbs
  • ⅓ cup finely chopped fresh flat-leaf parsley, plus more for serving
  • ¼ cup freshly grated Parmesan cheese, plus more for serving
  • 3 garlic cloves, finely minced
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon freshly cracked black pepper

Method

  1. Heat the oven to 400°F with a rack in the center position. Line 2 sheet pans with parchment paper.
  2. In a large bowl, combine the beef, pork, eggs, breadcrumbs, parsley, Parmesan, garlic, salt, and pepper. Mix well, then with wet hands, form golf ball–size balls (about 2 tablespoons each) and place on the prepared sheet pans. You should have about 25 meatballs.
  3. Bake, rotating the sheet pans halfway through, until golden brown and cooked through, about 20 minutes.
