Baked Fish With Potatoes & Olives

Ingredients
- 1 pound baby Yukon Gold potatoes, quartered (about 10-12)
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon kosher salt
- 1 ½ pounds white fish, such as cod or halibut, cut into 6 pieces
- 1 small red onion, cut into 1-inch wedges
- 2 cups mixed olive bar offerings, (see Note)
- ½ teaspoon freshly cracked black pepper
- 1 teaspoon onion powder
- Lemon wedges, for serving
Method
- Preheat the oven to 400°F with a rack in the center position.
- On a large rimmed sheet pan, toss the potatoes with the olive oil and ½ teaspoon of the salt. Roast for 10 minutes.
- Remove from the sheet pan from the oven and add the fish, onion, and olive bar offerings in between the potatoes. Season with the pepper, onion powder, and remaining ½ teaspoon of salt. Return the sheet pan to the oven and bake until the potatoes are browned and the fish is opaque and flakes easily with a fork, about 10 more minutes.
- Turn on the broiler. Broil until the fish and veggies are lightly charred, 3 to 5 minutes.
- Squeeze lemon juice over the entire dish and serve family-style.
Notes
When we say “olive bar offerings” we mean literally anything you want from the olive bar at your local grocery store, including peppers, olives, roasted garlic, and marinated artichoke hearts.
