Baked Chicken

Ingredients
- 4 boneless, skinless chicken breasts (about 2 pounds)
- 1 tablespoon + 1 teaspoon kosher salt
- ½ teaspoon freshly cracked black pepper
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon paprika
- 1 teaspoon brown sugar (optional)
- 1 tablespoon extra-virgin olive oil
Method
Add chicken and 1 tablespoon of the salt to a large bowl. Fill with cold water, cover, and refrigerate for at least 1 hour or up to overnight.
Preheat the oven to 450°F with a rack in the center position.
In a small bowl, combine the remaining 1 teaspoon salt, pepper, garlic powder, onion powder, paprika, and sugar (if using).
Transfer the chicken to a plate and pat dry. Brush with olive oil and season all over with the spice rub.
Arrange chicken in a 9x13-inch baking dish and bake for about 18 minutes, or until the internal temperature of the chicken reaches 165°F on an instant-read thermometer.
Turn the oven to broil. Cook until the tops are golden brown, about 3 minutes more.
Divide the chicken between plates and serve.
