Bacon Cheddar Biscuits

Ingredients
- 2½ cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon sea salt
- 1 teaspoon onion powder
- 8 tablespoons cold butter, cubed
- 1½ cup shredded cheddar cheese
- 1 cup cold buttermilk, plus more for biscuit tops
- 1 pound bacon, cooked and crumbled (optional)
- ⅓ cup chopped fresh chives
Method
Preheat the oven to 450°F with a rack in the center position. Line a sheet pan with parchment paper.
In a food processor, combine the flour, baking powder, baking soda, salt, and onion powder and pulse until combined. Add the butter and pulse until small (pea sized) crumbles form.
Add the cheese and pulse 2-3 more times.
Add the buttermilk and pulse until just large clumps form. Don’t overmix.
Turn the dough out onto a lightly floured surface. Using your hands, work the bacon and chives into the dough until combined.
Press the dough into a rectangle about 1-inch thick. Fold the rectangle into thirds and press again until 1 inch-thick. Using a 2½ -inch biscuit cutter (for circles) or a sharp knife (for rectangles), cut out the biscuits. Gather the scraps and press together being careful not to knead the dough. Gently press to 1-inch thickness. You should have 10 biscuits total.
Arrange the biscuits on the prepared sheet pan. Lightly brush with buttermilk. Bake for 18-20 minutes or until golden and cooked through. Serve warm.
