Method
In a medium bowl, combine the vinegar and onion. Let sit for about 15 minutes, or until beginning to soften.
In a small bowl, combine the honey, olive oil, garlic, salt, and pepper.
To the bowl with the onion, add the avocado, tomatoes, cucumbers, serrano pepper, if using, cilantro, and mint. Pour the dressing over top and toss to coat.
