Avocado Salad

Ingredients

  • ¼ cup red wine vinegar
  • ¼ red onion, thinly sliced
  • 2 teaspoons honey, warmed
  • ¼ cup extra-virgin olive oil
  • 1 garlic clove, grated
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 2 large avocados, diced
  • 1 pint cherry tomatoes, halved
  • 4 Persian cucumbers, cut into ½-inch pieces
  • 1 serrano pepper, seeded and thinly sliced (optional)
  • ¼ cup finely chopped fresh cilantro
  • ¼ cup finely chopped fresh mint leaves
  • Flaky salt, for serving

Method

  1. In a medium bowl, combine the vinegar and onion. Let sit for about 15 minutes, or until beginning to soften. 
  2. In a small bowl, combine the honey, olive oil, garlic, salt, and pepper. 
  3. To the bowl with the onion, add the avocado, tomatoes, cucumbers, serrano pepper, if using, cilantro, and mint. Pour the dressing over top and toss to coat.
  4. Sprinkle with flaky salt and serve immediately.
