Avocado Burger with Bacon

Ingredients

  • 2 pounds ground beef 80/20
  • 1 teaspoon sea salt
  • ½ teaspoon freshly cracked black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 tablespoons vegetable oil
  • 6 hamburger buns, toasted
  • ½ small head of iceberg lettuce, shredded
  • 9 slices of thick-cut bacon, cooked
  • ½ small red onion, thinly sliced into rings
  • 1 large avocado, pitted and sliced

Jalapeño Aioli

  • 1 cup mayonnaise
  • 1 jalapeño, seeded and minced
  • 2 tablespoons fresh lime juice (from 2 limes)
  • 1 clove garlic, roughly chopped
  • ¼ cup minced fresh cilantro

Method

Grill Method

  1. Make the burgers. In a large bowl, combine the beef, salt, pepper, garlic powder, and onion powder. Form into 6 ¾-inch-thick patties, about 5 inches in diameter.

  2. Heat the grill on high and brush the grates with the oil. Place the patties on the grill and cook until slightly charred and the internal temperature reaches 150°F on an instant read thermometer, 4 to 5 minutes per side. Grill the buns until golden brown, about 4 minutes.

  3. Meanwhile, make the jalapeño aioli. To the base of a food processor, add the mayonnaise, jalapeño, lime juice, garlic, and cilantro. Pulse until smooth, about 2 minutes.

  4. Spread the jalapeño aioli on the cut sides of each toasted bun. Divide the lettuce between the bottom buns, then top with the patties, bacon, onion, avocado, and top buns.


Stovetop Method

  1. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Once the oil is glistening, add the patties and cook until browned and the internal temperature reaches 150°F on an instant read thermometer, about 4 to 5 minutes per side. Toast the buns in a toaster or under a broiler until golden brown.

  2. Meanwhile, make the jalapeño aioli. To the base of a food processor, add the mayonnaise, jalapeño, lime juice, garlic, and cilantro. Pulse until smooth, about 2 minutes.

  3. Spread the jalapeño aioli on the cut sides of each toasted bun. Divide the lettuce between the bottom buns, then top with the patties, bacon, onion, avocado, and top buns.
