Asian Cucumber Salad

Ingredients
- 1/2 cup seasoned rice vinegar
- 1/3 cup sugar
- 1/2 tsp sea salt
- 1 tsp red pepper flakes
- 2 Tbsp toasted sesame oil
- 4 green onions, thinly sliced
- 3 large cucumbers, peeled, seeded, halved and sliced
- 1/4 cup crushed peanuts
Method
In a large bowl mix together the rice vinegar, sugar, salt, red pepper flakes, sesame oil and green onions, until fully combined.
Add the cucumbers to the bowl and toss with the dressing. Let sit for 10 minutes while the flavors mingle.
