Asian Cucumber Salad

Ingredients
- ½ cup seasoned rice vinegar
- ⅓ cup granulated sugar
- ½ teaspoon sea salt
- ½ teaspoon red pepper flakes
- 2 tablespoons toasted sesame oil
- 4 green onions, white and green parts, thinly sliced
- 3 large cucumbers, peeled, seeded, halved, and sliced (about 1¾ pounds)
- ¼ cup crushed roasted peanuts
Method
In a large bowl, combine the vinegar, sugar, salt, red pepper flakes, sesame oil and green onions.
Add the cucumbers to the bowl and toss with the dressing. Allow the salad to rest for 10 minutes.
Sprinkle with peanuts and serve.
