Thanks to Billy Green’s blog Wit and Vinegar for the past four years there has been such a thing as Popsicle Week, which challenges bloggers to share their favorite popsicle recipes with the rest of the world. Now if that isn’t contributing to society, I don’t know what is. You might think that as a professional food blogger the simple task of picking a favorite popsicle recipe would be easy, but it has been far from it. The popsicle is one of those ingenious creations that is full of endless possibilities. It can be creamy or icy, fruity or chocolatey, dairy-free or dairy-full, simple or a complex mix of flavors and ingredients.

Pistachio Popsicles with Dark Chocolate

After looking through the popsicle recipes from the previous four years of Popsicle Week, I tried hard to look for flavors that had yet to be represented and discovered that there are zero popsicles on any of the year’s lists that contain pistachio. Shocking I know. Pistachio is one of my absolute favorite gelato flavors so creating a popsicle with similar flavors seemed worth a try.

These pistachio and coconut cream popsicle are simple (they require a mere five ingredients) and are vegan, relatively healthy (which is always a good attribute of a popsicle, giving you even more reasons to eat multiple per day) and quite honestly SO tasty. Pistachio Popsicles with Dark Chocolate

Ingredients

1 ¼ cup pistachios, divided
1 (14 oz) can coconut cream
½ cup sugar
¾ cup coconut flakes (sweetened or raw), finely shredded, divided
2-3 oz dark chocolate

Method

  1. In a large bowl, soak one cup pistachios overnight in 3 -4 cups filtered water. 
  2. Drain the pistachios and place them in a blender. Add one cup of filtered water and the can of coconut cream to the blender. Blend on high for 1-3 minutes (depending on the quality of your blender). 
  3. Using a nut milk bag or double layer of cheesecloth set over a strainer, strain the pistachio pulp from the liquid. Pour the liquid along with the sugar into a small saucepan set over medium heat. Heat until sugar dissolves. Depending on the type of sugar you use this step could take anywhere from 3 minutes - 8 minutes (if using raw sugar). Remove from heat and allow to cool. 
  4. Add ½ cup coconut flakes and pour into a popsicle mold. 
  5. Once the popsicles are frozen, melt the chocolate over a double broiler. Finely chop the remaining ¼ cup pistachios. 
  6. Remove the popsicles from the mold and lay on a baking sheet. Drizzle with chocolate. Sprinkle with the remaining coconut flakes and extra pistachios. Enjoy
