Cinco De Mayo is easily one of my top three favorite holidays to celebrate, and here's why; Mexican food, a gathering of my favorite people and, you guessed it, margaritas. I, for one, am thankful that we have a day to celebrate and learn about Mexican heritage and that it has become such a beloved occasion nationwide.

Last year to mark the occasion, Natalie and I made and shared our favorite recipes for guacamole & margaritas, and of course we make our chicken tortilla soup (a TMP favorite) on the regular in our home (that stuff is way too good to reserve for special occasions), but today I wanted to share a recipe for perhaps the most basic of Mexican side dishes and sauces: Pico De Gallo. Simple as it sounds, there is a trick to it, and once perfected you'll be wondering why you were ever crazy or lazy enough to buy it store bought. I discovered the secret to the most amazing pico de gallo I had ever had a few years back and I’m excited to be sharing it with you all today. I sent a text to my good friend Steve, who first introduced me to this lovely version of salsa fresca, asking if we could please have and share the recipe, and here was his response:

“Hey Holly! It’s a pretty poorly kept secret! Onion- diced, Tomatoes - diced, Cilantro- torn, Cabbage - shredded, Jalapeno - diced, Lime - squeezed, Salt- shaken. How much of each? It’s the Mexican Flag Ratio: equal parts red, white, and green.

Thanks Steve! And, because if you're like me and “make it look like the Mexican flag” stresses you out because you like EXACT measurements, have no fear. We tested ratios and came up with what we think is the perfectly balanced Pico De Gallo, based off of Steve’s winning ingredient combination. Did anyone catch that secret ingredient? You got it... cabbage! Cabbage will keep your pico extra crispy, which in my book makes it the only way to go.  And while this recipe is ridiculously simple, it does require some knife skill with all that chopping and dicing, so Natalie and I thought this would be the perfect time to host a fun giveaway for three amazing Zwilling Pro knives: the 10” bread knife, 5.5” prep knife and the 8” Chef’s knife.

Pico De Gallo with Cabbage

Serves 6

Ingredients

2 cups ripe tomatoes, diced
2 cups white onion, diced
2 cups green cabbage, chopped
2 jalapeños, seeded, chopped
1 cup cilantro leaves, torn, firmly packed (about 2 bunches)
1/4 cup freshly squeezed lime juice
2 tsp sea salt

Method

Mix all ingredients in a large bowl. Serve with chips for scooping or on top of your favorite tacos!
