Holly is currently vacationing in the beautiful city of Austin, Texas. I keep refreshing Instagram to see if she’s posted a new photo of where or what she’s eating so I can live vicariously. So far she’s leaving me high and dry, so I’m using that, along with the fact that back in the Northwest it is pouring down rain, as an excuse to cook something really unhealthy. See, if you look hard enough you will always find the excuses you need to indulge a bit. To the kitchen I go.


Nothing beats it’s crispy edges, and melty insides, and in this recipe the bit of tang that comes from the jelly and arugula amount to perfection.

We recently received our Hatchery box (which we absolutely LOVE), and before Holly’s departure we sorted through it, and let our imaginations run wild with all the good things that could be made from its contents.

We spotted some amazing Red Pepper Jam by Jammy Yummy, and that particular day it was just the excuse we needed to dive in and create a luscious grilled cheese for ourselves (like I said earlier, you can ALWAYS find an excuse, if you’re looking hard enough). If you’ve never had red pepper jam, you just have to try it because it is oh, so good with all things cheese related. If you’ve had it, well then you’ll take no convincing.

We are fans of using semi soft cheeses for a grilled cheese because it seems to offer the best results for a gooey, stringy mess when you pull one half away from the other. On Holly’s recommendation, we spread a generous serving of cream cheese on the inside of the bread, then some lovely swiss, shaved ham, the red pepper jelly and finally a bit of arugula and got to grilling. The results? I feel like the pictures speak for themselves. But just in case you need me to spell it out for you…dang! It was good. Really good.

Last year Holly and I decided on the best approach to a perfect grilled cheese (which you can find here) and we haven’t looked back on those methods since. Nothing beats it’s crispy edges, and melty insides, and in this recipe the bit of tang that comes from the jelly and arugula amount to perfection. So today, I’m grilling one of these beauties up, once again and thanking God for excuses. And for grilled cheese, of course.

Grilled Ham & Cheese Sandwich with Red Pepper Jelly

Grilled Ham & Cheese Sandwich with Red Pepper Jelly

Serves 2

Ingredients

4 slices crusty bread
4 oz cream cheese
2 tbs red pepper jam
4 slices swiss cheese
6 slices good quality deli ham off the bone
1 cup loosely packed arugula
2 tbs butter
2 tbs mayo

Method

  1. Spread the cream cheese on the inside of the bread.
  2. Layer on one half the remaining ingredients in the following order: ham, swiss, red pepper jelly, arugula, swiss cheese.
  3. Mix the butter and mayo together and spread onto the outside of the bread and stack on top of the sandwich.
  4. Repeat for second sandwich.
  5. Heat a large skillet over low heat and place your sandwiches in. Do not turn up the heat.
  6. Allow them to cook slow, about 10 min, before flipping them.
  7. Keep grilling until both sides are golden and crispy. Slice in half and serve hot.
