When children get to spend time with their Grandparents, or grandparent figure, it is full of love, rule breaking and memory making. Grandparents are such a blessing. We are very fortunate to have some of the best parents and someday, hopefully, our kids will realize they are the luckiest kids on the planet! Thanks to the interests of our previous generation, our children have access to have chickens, a dog, a cat, sheep, fresh honey and more berries then a child could dream of. I would’ve died and gone to heaven as a child if my grandparents had all of that! Lucky kids.

If your child didn’t luck out with grandparents with goats, sheep and berry farms you can still make memories worth telling stories about. In Mukilteo, WA, a place very close to our hearts. Gammie and Gump live less than a mile from the Mukilteo lighthouse, park, beach front, ferry dock and farmers market. They also live just a few miles away from Forest Park. A donation run park, with a pool, spray ground, playground and a petting zoo.

On our most recent trip to Gammie and Gumps, we took the kids to Forest Park to meet up with family. The kids got to ride ponies, see baby bunnies, pigs, chickens and even goats. Memories made.

This salad is a good one for the season we are in now. Late summer, when blackberries are dripping off their stems, and if you live in the Northwest, are probably taking over your backyard.

Blackberry Chèvre Salad

Serves 4

Ingredients

12 oz arugula
3-4 oz chèvre goat cheese
2 cups blackberries
1/4 cup pistachios, shelled

Honey Mustard Vinaigrette

2 tbsp stone ground mustard
2 tbsp honey
6 tbsp rice vinegar
1/2 cup olive oil or extra light tasting olive oil
1/2 small shallot, minced (2 tbsp)
salt and pepper to taste

Method

  1. In a small bowl whisk together mustard, honey, vinegar, olive oil, shallot and salt and pepper until fully combined. Alternatively you can emulsify this dressing in a blender.
  2. Toss the arugula, goat cheese, blackberries and pistachios with the dressing, and serve.
