Crispy veggies, colorful salads, and post dinner sunsets...these are few of my favorite things about spring. Not to mention the pops of color that are showing up around every corner. After what seemed like an extra long winter I’m definitely ready for the change. While I know we are one day early for the official start of spring, I just couldn’t resist talking about it, especially when these lemongrass chicken lettuce wraps that were inspired by the colors we are seeing all around us are involved. Trust me when I say this is the lunch/dinner recipe you didn’t know you needed and may just be the meal that convinces you to begin meal prepping.

Let’s talk about prepping for a minute. I’m the first to admit that despite the convenience I’m not a huge meal prepper. I love it in theory, but my sheer laziness usually prevents me from giving an entire day to planning and executing. After this recipe though, I’ve convinced myself I just need to start doing it, because it is so worth it. For me, it’s all about roasting a chicken. I’ve realized I can stretch a whole bird to cover a half week’s worth of meals, and by doing it myself (rather than buying one premade from the market) I can achieve a much greater variety of flavor. Since you’re already going to the trouble (that’s a joke it’s the easiest thing ever) of roasting a chicken, just add to that some prechopping of veggies, and voila, your evening dinner rush troubles go out the window. So let’s review:

So, hopefully you’re now convinced to begin meal prepping. Now, all you have to do is start with these lettuce wraps that are filled with the most delicious lemongrass chicken. As if roasting a whole bird wasn’t easy enough, Gourmet Garden went out and pre prepped the best herbs and flavors out there, so that all you have to do is squeeze and stir. While we love all of their pastes, our go-tos for this recipe are their lemongrass, garlic, and ginger pastes. The best thing about using Gourmet Garden’s pastes is that they last SO much longer than buying the fresh herbs (do you hate buying a whole pack of herbs for just one recipe and knowing they’ll go to waste as much as I do? It’s the worst). Not to mention you get to skip the laborious process of making the pastes yourself. (Save your elbow grease for something else.) Once these flavors are stuffed under the skin of a spatchcocked bird and roasted until the skin is crispy we can think of 101 things to put the finished results on. (By itself is just fine too, of course!) Today we are starting with these crispy and savory lemongrass chicken lettuce wraps, which are pretty close to perfection, if we do say so ourselves.

The easiest lettuce to use for lettuce cups is probably Boston lettuce, but we were looking for more flavor and color so, inspired by all the fresh produce popping up, we went with radicchio and had no regrets.

What is radicchio?

Radicchio is a chicory. It’s somewhere between a lettuce and cabbage in texture. Its slightly bitter and spicy in flavor and is wonderful grilled, chopped, or (like today’s recipe) filled with lemongrass chicken.

Once your cups are filled with chicken, fresh herbs, a few optional chilis for heat, and a mixture of veggies, top them with a sweet glaze that has been simmered down to a thick sauce and is loaded with more ginger and garlic paste. If you want this dish to be even heartier, just put all the ingredients on a bed of vermicelli noodles (YUM!) and drizzle with more sauce.

BBQ Sauce

Scallion Sauce


  1. Preheat oven to 400°F. To prepare spatcocked bird, remove the back bone and butterfly open skin side up. Like here. Set bird on a wire rack over a backing sheet.
  2. In a small bowl mix together ginger, garlic, lemongrass and honey. Stuff the mixture under the skin of the bird and all over the underside of the bird until mixture is completely used up. Top the skin with the kosher salt. Place in oven on center rack and roast for 1 hour until internal temperature reads 165°F.
  3. While the chicken is roasted mix all BBQ sauce ingredients into a sauce pan and set over medium heat. Bring to a simmer and allow to cook for 7-10 minutes until it slightly thickens. (Sauce will continue to thicken as it cools.) Set aside until ready to use for serving,
  4. In a small bowl mix together ingredients for scallion sauce. Set aside until ready to use.
  5. Once the bird is done allow to cool before shredding for use.
  6. Fill each lettuce cup with chicken and top with optional toppings, BBQ sauce and scallion mixture. Enjoy!
